Unlike the vast majority of our bourbons, which are distilled with barley as flavor grain rather than traditional rye or wheat, our latest black label release, Single Barrel #3788, is one of only a handful of true high-rye bourbons we’ve ever produced. After over-ordering Danko rye for a weeklong distillation run of our Empire Rye back in April of 2016, we decided to integrate the excess 100+ lbs of rye into a subsequent bourbon distillation. The result was a unique 57% corn/28% rye/15% malt bourbon mashbill that, after aging for over 7 years in an especially tight-grained 53-gallon barrel, melds our house style with that of a more traditional bourbon. Still thick with our classic notes of maraschino cherry, plum, and chocolate, this 126-proof high-rye bourbon also features a sustained backbone of robust spice and herbaceous complexity.
